Chef Jeff’s Pizza Dough (Thick, Medium or Thin)
Yield: one 13×18 half sheet pan crust OR one 16” round crust
THICK CRUST
- 1½ Cups Water
- 4 Cups Bread Flour
- 1 T Sugar
- 1 T dry active Yeast
- 2 tsp Salt
- 2 T Olive Oil
- Pan Spray (as needed)
MEDIUM
- 1 Cup Water
- 2¾ Cups Bread Flour
- 2 tsp Sugar
- 2 tsp dry active Yeast
- 1 tsp Salt
- 4 tsp Olive Oil
- Pan Spray (as needed)
THIN
- ¾ Cup Cup Water
- 2 Cups Bread Flour
- 1½ tsp Sugar
- 1½ tsp dry active Yeast
- ¾ tsp Salt
- 1 T Olive Oil
- Pan Spray (as needed)
DIRECTIONS
1. Heat the water in the microwave until hot, approximately 1 minute for ¾ Cup.
2. Place the bread flour, sugar, yeast, salt and olive oil a mixing bowl. Using a dough hook, thoroughly knead the heated water into the bread flour mixture.
3. Cover the dough in the mixing bowl and place it in a warm location to rise for about 2 hours.
4. Spray a baking sheet and press the dough into place. If it seems very elastic and doesn’t want to stay in place (which is typical), allow it to rest for about 10 minutes and then continue to press it in place. Dock the dough and allow it to rise on the pan for about an hour.
5. Par-bake the crust at 400° for 8 minutes.
6. Top your pizza as desired and bake it in the oven or grill for 20-30 minutes.
7. Cut into pieces while hot, serve and enjoy with your favorite beverage!
Chef Jeff’s Breakfast Pizza
- Pizza Crust, parbaked (16 inch round or 12×18 rectangle)
- 2 T Canola Oil (or other)
- 1 lb Breakfast Sausage (bulk, raw)
- 1/4 Cup All Purpose Flour
- 16 oz Whole Milk
- 1 lb Bacon (diced, cooked & cooled)
- 12 each Eggs (scrambled, cooked, cooled)
- 1 lb Ham (diced, dried on paper if juicy)
- 8 oz Cheddar Cheese (shredded)
- 8 oz Pepperjack Cheese (shredded)
DIRECTIONS
- Using the Canola Oil, brown the breakfast sausage into crumbles. Pick up the residual fat with the flour to make a roux. Add the milk and stir until creamy to make the sausage gravy. Cool.
- Dice the bacon and render it as desired. Drain and cool.
- Scramble the eggs and lightly cook them into small curds. Cool.
- Preheat the oven or grill to 375F
- To assemble the pizza, lightly oil the pan under the crust to help give it crispiness as it bakes.
- Spread the sausage gravy on the pizza crust. Then evenly distribute the diced bacon, diced ham, scrambled eggs, cheddar cheese and pepperjack cheese.
- Bake the breakfast pizza for about 30-40 minutes until golden brown.
- Slice into portions and serve immediately for a very hearty meal.
