Chef Jeff shared a special family recipe during Wednesday’s Focus Fox Valley; his grandmother-in-law’s refrigerator pickles! Enjoy this batch of Dorena’s Summer Pickles!
Dorena’s Summer Pickles
Ingredients
- 8 Cucumbers (large, sliced thin)
- 1 Yellow Onion (medium, sliced thin)
- 1 Cup White Vinegar
- 2 Cups White Granulated Sugar
- 1/3 Cup Salt
- 1 teaspoon Celery Seed
Directions
- Combine the sliced cucumbers and the onions in a mixing bowl. Refrigerate until needed.
- In a sauce pan, combine the vinegar, sugar, salt and celery seed and bring it to a boil to form a brine. Allow to cool at room temperature.
- When the brine is cool, pour over the pickles and onions and allow to marry.
- Pickles can be consumed after 24 hours, and will keep in the refrigerator for months. Enjoy!
