PATRIOTIC ICE CREAM CAKE
- 1 (15.25-oz.) oz. box of white cake mix, plus ingredients called for on box
- 1 pint vanilla ice cream
- ½ cup patriotic sprinkles, plus more for garnish
- Red and Blue Food Coloring
- 1 cup heavy cream
- ¼ cup powdered sugar
1. Preheat oven to 350 degrees and line two round cake pans (8” or 9”) with parchment paper. Grease with cooking spray.
2. In a large bowl, prepare cake mix according to package directions. Divide batter evenly into two bowls (2 cups of batter each). Dye the batter in one bowl red and the other blue.
3. Pour each colored batter into separate pans and bake approximately 25 minutes or until toothpick comes out clean. Let the cakes cool completely.
4. In a large bowl, mix together ice cream and sprinkles. Using a serrated knife, level the rounded top of each cake until flat. Place one cake in the bottom of a springform pan (same size as your cake pan). Top with ice cream and smooth with an offset spatula. Top ice cream with second cake. Freeze cake until ice cream has hardened, about 4 hours.
5. Meanwhile, make whipped cream: In a large bowl using a hand mixer, beat heavy cream and powdered sugar until stiff peaks form.
6. Remove cake from springform pan and frost top with half of the whipped cream. Place remaining whipped cream in a piping bag and pipe dollops around the
edge. Top with more sprinkles and serve immediately.
PATRIOTIC POPCORN
- 10 cups of popped popcorn
- 3 Tbsp. salted butter
- 3 cups mini marshmallows
- ¼ cup of pretzel balls
- Red, White, and Blue M&M’s and candies
- Red, White and Blue Sprinkles
1. Pop 10 cups of popcorn and salt liberally and place in a large bowl.
2. Melt 3 tablespoons of butter in a medium saucepan over medium heat. Once the butter is melted, add 3 cups of mini marshmallows and stir until all the marshmallows are melted. Remove from heat.
3. Pour ¾ of the marshmallow mixture over the popcorn and gently fold the popcorn with a spoon until most of the kernels are coated.
4. Pour the coated popcorn onto a prepared cookie sheet.
5. Drizzle the remaining marshmallow mixture over the popcorn and sprinkle with candy pieces, pretzel balls and sprinkles.
6. Allow popcorn to cool. Break apart into pieces and serve.
