Strawberry Cheesecake Jell-O Salad
- 6 oz. strawberry Jell-O
- 2 cups boiling water
- 23 oz. tub frozen strawberries with sugar, thawed
- 8 oz. block of cream cheese
- 1 cup sugar
- 12 oz. Cool Whip
- 2 sleeves graham crackers (3 cups crumbs)
- ½ cup butter
- 1/3 cup sugar
For Crust:
Melt the butter in a medium bowl and stir in finely crushed graham crackers and 1/3 cup sugar. Press into the bottom of a 9” x 13” pan. Let cool in fridge for 10 minutes.
Cream Cheese Layer:
In a medium bowl combine the 1 cup of sugar and cream cheese. Mix with a hand mixer until well blended. FOLD in the Cool Whip and spread over the cooled graham cracker crust.
Jell-O Topping:
Boil 2 cups of water. In a medium bowl combine the Jell-O and hot water until it dissolves. Add the thawed strawberries. Pour the Jell-O mixture over the cream cheese layer. Place in the refrigerator for 4 hours before serving.
