Chef Jeff’s Florentine Filling
Yield: About 1 Quart
- Bacon, diced small 8 ounces
- Onions, yellow, diced small ¾ Cup
- Spinach, chopped, thawed 1 Pound
- Cheese, American, processed 8 ounces
- Breadcrumbs (optional) If needed
1. In a skillet, cook the bacon pieces until they are about half done.
2. Add the onions to the bacon and continue cooking until done.
3. Discard any residual grease.
4. Add the chopped spinach and cook until hot.
5. Add the American cheese and stir until melted.
6. Add breadcrumbs IF NEEDED to tighten the mixture.
7. Serve immediately as a topping or cool to use as a filling.
Chef Jeff’s Basic Almond Crust
Yield: about 1 pound
- Almond Flour 2 Cups
- Parmesan Cheese, grated 1 Cup
- Butter, melted ¼ Cup (½ stick)
- Eggs, fresh, large 2 each
- Pan spray as needed
1. Preheat the oven to 350˚ F.
2. In a medium mixing bowl, combine the almond flour and Parmesan cheese.
3. Add the melted butter and eggs. Combine thoroughly to form the dough.
4. Flatten the dough to the desired thickness.
5. Cut, shape, fill or fold the dough as desired.
6. Bake your product for the appropriate amount of time based on what you are
making, at least 20 minutes. It is desirable to achieve a light golden brown,
staying mindful that almonds can burn.
7. Serve immediately or reserve for future service.
Brenda’s APPLE SAUCE CAKE
- ½ cup shortening
- 2 cups sugar
- 1 large egg
- 1 ½ cups apple sauce
- ½ cup cold water
- 2 ½ cups flour
- 1 ½ tsp baking soda
- 1 tsp. salt
- 1 tsp. cinnamon
- ½ tsp. cloves
- ½ tsp. ground all spice
1. Preheat oven to 350 degrees and spray a 9” x 13” pan with non-stick cooking spray.
2. Cream together the shortening, sugar, egg, apple sauce and water. Add all remaining dry ingredients—flour, baking soda, salt, cinnamon, cloves, and all spice. Mix until all ingredients are incorporated. Pour into prepared pan. Sprinkle with cinnamon and sugar (if you are not planning to frost).
3. Bake for 45-50 minutes or until toothpick comes out clean. Let cool. Frost and serve.
Frosting:
- ¼ cup butter, softened
- 2 ½ cups powdered sugar
- 1 tsp. vanilla
- ¼ tsp. cinnamon
